There isn't an official Bedrock server for ARM. One solution that might work is actually running a Java server. It's possible to run a Minecraft Java Edition server together with GeyserMC to allow Bedrock clients. GeyserMC is actually very simple to install, together with Floodgate. It seems to work very well and I'm not sure what are the downsides to using this.

If using Docker, I highly recommend using this Minecraft server container by itzg, it's highly configurable and has ARM and ARM64 images in addition to the regular x86-64 (Note: itzg also has a Bedrock server container, but that one doesn't have images for ARM).
