The homebridge docker image is based on node16.14.0 (https://github.com/oznu/docker-homebridge/blob/master/Dockerfile). The Dockerfile is where the node version is defined. Until the node version isn’t updated there, docker-compose pull won’t upgrade your node version.
What strikes me the most here, is the hard requirement on having node 16.14.2 from homebridge-hue. You folx should open an issue on their Github to find out why. That plugin is a verified Homebridge plugin and as per the guidelines, the pluging should support all major node LTS: https://github.com/homebridge/verified -> The plugin must run on all supported LTS versions of Node.js, at the time of writing this is Node.js v12, v14, and v16.
