The last and simplest thing to do is use something like https://elesiuta.github.io/picosnitch/ to see if the program is sneakily connecting to the internet without you knowing, since stuff can't do much harm without connecting to the internet (assuming you keep good backups which you should be doing anyways).
Independent rebuilders can mitigate this to some degree, unless you can compromise all of them in some way. Some are listed on https://rebuilderd.com/, this is based on reproducible builds and only works for reproducible packages/software though.
