Many players (myself included) prefer to use a client such as MultiMC for this purpose, because it makes it much, much easier to keep different versions separated like this. MultiMC sets up each new instance in a different folder by default, and I believe that's also how GDLauncher that winter_charm mentioned works, but I haven't used it myself. But if you prefer the vanilla launcher you can totally do it; it just requires a bit more knowledge, fiddling, and attention to detail.
