InfluxDB
Power Real-Time Data Analytics at Scale. Get real-time insights from all types of time series data with InfluxDB. Ingest, query, and analyze billions of data points in real-time with unbounded cardinality.
For me: install Debian on an old laptop (or buy a second hand one). Get Docker-CE up and running and then use the Home Assistant supervised script to get HA installed.
Depending on your skill level / willing to spin up something more customized, get a Pi + Home Assistant. Home Assistant allows you to glue all those different products together in 1 interface. I would also try an go with things that don't need a login / offline control, since you don't want to have a useless device because company XYZ killed the service or your internet is down.
