You can use cage, which simply displays all windows fullscreen. In Xwayland you can enable a root window, so that instead of integrating with the Wayland environment it creates only a single window which contains the X desktop, compatible with any WM. Should work fine, you just need to unset WAYLAND_DISPLAY.

Btw I just found this thread, which mentions the wlr-foreign-toplevel-management protocol I meant in my previous comment and also that they found some Gnome-specific solution. I could imagine they’d just write a Gnome extensions which provides all the data they want.
The only issues would be deploying new stuff but Wayland is at the point now where most major features are more or less done and remaining Wayland-related issues are either application specific or relate to the stability of new features (like OBS support). So the OP kind of takes care of regular Xorg users in the intervening time (between the features being filled in and being made stable).
