A backup with Ansible would certainly be feasible (e.g. https://github.com/AlphaNodes/ansible-backup). But I would only use Ansible to set up the backup (cronjob / timer etc.) and not to run a backup regularly.
Personally, I am a fan of Borg. With it, I backup the user data of several computers in an extra repository each. The advantage of Borg is that it has versioning, the data is encrypted out of the box and thanks to deduplication backups are fast and space-saving.
