Now this is where Spigot comes in. Spigot is a server software that basically makes the vanilla jar less laggy and adds in plugin support. These plugins are fully server sided. This is what Geyser works with. But nowdays, it has been very inefficient compared to Paper, and is pointed out here that it has fallen behind. Spigot is also closed sourced

Paper is a fork of spigot, designed to reduce lag and fix expoilts and bugs (like dupes and crash exploits). Unlike spigot, it is fully open source and community driven. I would recommend using Paper no matter what, since it is a very stable fork of spigot. All spigot plugins will work with paper and all forks of paper as well
Geyser supports both spigot and paper, and also supports BungeeCord/Waterfall and Velocity proxies. You can find how to set it up here. In order to use Geyser with mircosoft accounts, Floodgate is needed
