Unfortunately JellyFin "supports" this but with some trade-offs, e.g. all slashes will seemingly always get split into multiple artists, though I'm not sure if this would be a major issue in practice... Do you know if I would be able to manually correct the tags if it did this?
Subsonic's API doesn't support multiple artists, so I'd be somewhat surprised if the project itself did. Airsonic...do you have anything showing it supports it? All I found was this issue for genres (not entirely the same though) which is still open. I do see jpsonic mentioned there though, it seems like that one might support it?
Sadly it doesn't seem to.
LMS (https://github.com/epoupon/lms) supports multiple artists per track, and more generally multiple values per tag (multi genres, etc.)
