Hi u/RandomComputerFellow, for what it's worth, you can self-host Standard Notes as well. Overhauling the setup docs is on our todo list, but if you have any questions with the current guide you can create a thread in the Issues tab of the syncing-server repo. 🙂
Personally I prefer Joplin. It's an open source note app that supports end-to-end encrypted synchronization. It can be used with cloud services like Dropbox or Nextcloud, but also via the local filesystem (which should enable it to be used with Protondrive once a desktop sync client is available from Proton). I like that you are not locked into a company's service. It's maybe not as polished as some of the commercial note apps, but once you get used to the markdown formatting it's very convenient.
