statusBarPropTo and statusBarProp write to X-properties instead of the pipes. This leaves much less room for things to go wrong. For it to work, you need to configure your xmobar to read from different properties. You could pass this as a parameter to the command you're using to launch xmobar (see this, you'd want to use the -C argument). Or you could use statusBarPipe instead, just to debug the other problems first (I highly recommend using property logging).
