The Ultralytics repo for yolov3/v5 have quite a few good tutorials in them and has everything set up for you so you can plug in a dataset and run. Specifically, they have a train custom data tutorial here. (Side note, if you're looking for an entertaining paper to read, the yolov3 paper is great.)
Also, this SSD walkthrough is pretty good as well and goes into a lot more depth on the concepts.
