Mycroft uses Precise by default. Your mic is listened to locally, no audio is streamed. There is an option to contribute your activations to help train better models, and if that is selected then each activation will send the audio clip of you saying "Hey Mycroft" (or whatever your wake words is) plus a couple seconds preceding it. If your request does not register with a skill, it will also reach back to the Mycroft server as a final try and use the Wolfram Alpha service to try to handle it. This is the default fall-back skill. (see https://github.com/MycroftAI/fallback-wolfram-alpha)
some great responses here already, if you want to verify what information is sent you can also install the mock-backend. the logs will show you exactly what is being sent.
