I generally use either https://www.qownnotes.org/de/ or https://www.giuspen.com/cherrytree/ for notes.
I started to use Joplin since I moved to Ubuntu from Mac a couple of months back. Really like it, since you can have multiple levels of notebooks; todo's; notes; etc. And is is free and open source! https://joplinapp.org/
Another quite powerful tool is Trilium Notes. However, the tool is based on Electron, which may be a criterion for exclusion for some people.
