I started using Cura and didn't get the error anymore, I wasn't sure what the cause was but found a post suggesting its the black and white wire on the BLTouch that has connection issues (https://github.com/MarlinFirmware/Marlin/issues/8926), that didn't explain using a different slicer solving the issue though...
This year I started using an adapted version of the latest Marlin firmware (https://github.com/Desuuuu/Marlin). The touch screen works a lot better. I started printing and after a while still got the M999 error, carefully pulling the BLTouch probe somehow fixes this issue and I'm now able to use Simplify 3D, no idea if its related to slicer though since that doesn't make sense...
