The only language I can think of that fully meets these requirements is Vala. It is GNOME-centric, is available in any distro, has automatic memory management, and has bindings to a ton of open source libs.

To clarify my requirements, I currently maintain https://github.com/alexpdp7/cmdainer/ , which is a Docker/Podman wrapper to run individual commands in a container, with your home directory mounted- so it works fairly transparent. Toolbx/Distrobox do something similar, but I've been playing with them and my own tool, and there's something lacking, so I'm setting out to experiment and try if I can create a nicer tool.
