As for the script, you can look into and setup one of the game server managers out there. I use Pterodactyl, and I can set up servers and restart schedules right from the panel. There's also MSCS and other scripts out there that you can use.
If you're not hosting it through a game server manager, I suggest using PaperMC for vanilla server. It comes with a /restart command you can run to restart the server, and you can find and add a plugin that does that for you. There is a mod for that for use on modded servers as well.
