The older versions of the hub (10501) appear to be running an RTOS based on an older version of https://github.com/particle-iot/device-os so likely the simplest way to take control over it would be to redirect the api endpoints to your own server, re-implementing their protocol (the urls are device-api.8slp.net and raw-api-upload.8slp.net). I think the protocol itself supports something like ssl, so you might need to overwrite their certificate within the firmware tho (on top of implementing the protocol itself). They seem to have a significant portion of the firmware on an SD card that you can dump (but it's a not very useful binary blob, mostly).
