How do you guys make good use of the app grid? I feel like I use it way less than I originally thought.

  Alphabetically order GNOME's app grid and folders

I personally use the Alphabetical App Grid extension, and have all the apps outside of folders. I rarely use the app grid as I usually just use Super + to launch from the dash or type to search and open, but I will use it sometimes if I am unable to type at the moment for any reason. So I'll just scroll through the sorted list until I can find and open the app.

NOTE: If you're using a Wayland session, the Ctrl + Space shortcut (which brings up the launcher) will be unreliable due to other windows eating the keyboard events instead (see the official Ulauncher wiki).
