    I personally use the Alphabetical App Grid extension, and have all the apps outside of folders. I rarely use the app grid as I usually just use Super + to launch from the dash or type to search and open, but I will use it sometimes if I am unable to type at the moment for any reason. So I'll just scroll through the sorted list until I can find and open the app.
