truecharts is possibly the most exciting thing at this point, although creation screens are still not customized for specific apps (no simple way to passthrough Intel GPU to jellyfin app, as opposed to the Plex officially supported app)
create a macOS VM with OpenCore using this amazing guide. I am quite sure it can be done since TrueNAS SCALE uses kvm for virtualization. I hope someone more knowledgeable than me will come with a one-click solution for a macOS Big Sur VM.
