Does reverting to the previous build (1.29.2.6364) help? Since I haven't experienced any issues I can't offer much helpful advice unfortunately, but you could also try searching the official forums and see if anyone is reporting similar issues.
When ripping 4K discs with MakeMKV, it's not choosing DV over HDR10, it's ripping both. If you then try to play it on something that supports HDR, but not DV, it should seamlessly fall back to HDR10. If you open the files in MediaInfo, it should show something like this, indicating it has both DV and HDR10: https://i.imgur.com/fFLy9uz.png
