Second: Look into the Plex-Meta-Manager Project. I currently only have used it for automatically changing and modifying posters and haven't specifically looked into editing episodes or text metadata in general, maybe you can do that to automatically overwrite the metadata of those episodes.
Fourth: Using a different Agent. There is an NFO Importer that can read NFO files that you would need to create. This would make the metadata completely local and "refreshing" it would mean that you have to change it manually. Unfortunately, those "type" of agents are 3rd Party and rely on an old dependency in plex. While they still work, there is no official statement yet when those metadata agents will stop working. Plex has deprecated plugins for 4-5 years now which Metadata agents are technically a part of. That also means that you wouldn't be able to mix those agents together. Unfortunately, you cannot select a 3rd Party agent to retrieve metadata for a library that is mainly using the new and official plex metadata agents.
