Wireguard on host or in Docker container?
I run a lightweight VM just for wireguard with a kernel that has it built in. On the same VM I installed docker and run https://github.com/EmbarkStudios/wg-ui which makes it way easier to create profiles.

Evaluating moving from OpenVPN to WireGuard. Some questions.

Thought so, as I was trying to do the same thing as you when I found it. Hope it does the job for you as it does for me. Then after you learn a bit more about docker and docker-compose you can also add this as a dead simple UI for Wireguard https://github.com/EmbarkStudios/wg-ui .

Is it possible to make a phone connect to a server without having to open any ports on the server side ?
I suggest running a VPN server like wireguard (very easy to install on phone and set up using https://github.com/wg-easy/wg-easy) and have the port open only to that. The VPN will do the rest in terms of NATing ports and whatnot.
