Enabling Automated Snapshots with AWS EBS CSI?
Step 2: Install this open-source serverless stack which effectively runs daily, scans every region for any EBS and EC2 instances with that tag, and it creates a "rolling-window snapshot". It will by default run once a day and take snapshots, and it will keep 7 days worth of snapshots into the past. All those values are configurable.

efs-csi in eks - backups?
For backing up the physical EBS disks, I wrote a little serverless helper to do this ages ago. https://github.com/AndrewFarley/AWS-Automated-Daily-Instance-AMI-Snapshots just tag your volumes with "Backup" == "true" and it'll back them up automatically, incrementally, and only a certain time window backwards (7 days, daily).
