One track not possible to sync [Ambit 3 Peak]
There kind of is, more than one actually. Available options depend on how comfortable you feel with linux ( to use Openambit - https://github.com/openambitproject/openambit ) and/or python ( https://github.com/openambitproject/openambit/issues/232#issuecomment-515981040 , last link of that post) or with your browser's developer tools (to manually go through process that previos option automates ). Last 2 rely on Suuntolink, it's about changing the default Suuntolink behaviour a bit so it would keep the local copy of the activity file.

I know there are some projects like that (example 1 for Garmin, example 2 for Suunto Ambit watches), but all in all there’s seemingly relatively little interest in it. In the end I just gave up and used the proprietary apps for the various sports watches I’ve owned.

Fitness Tracking Watches
I’m afraid there really aren’t any products like that. Closest I’ve found is buying a Suunto Ambit with heart rate monitor and syncing it with Openambit. It’s disappointing, but that’s the best option I found when searching for it.

Is there a simple way to connect a Suunto watch to a Linux PC without using any Cloud based services ?
Not that I am aware of. The older devices have OpenAmbit but I haven't seen a project to do the same for the recent devices.

Movescount work outs
In not-so-long ago it was (technically) possible to create & manage workouts without the Movescount mobile app - apparently Suuntolink is happy to sync those to the watch. Few successful proof-of-concept attempts to manage workout creation are documented here - https://github.com/openambitproject/openambit/issues/257 . No telling if all the backend services needed are still provided or were switched off when Movescount mobile app access was disabled.
