Controversial: I think that pop os would have been the perfect distro, if GNOME wasn’t the default DE.

-Improved OSK: This extension adds extra keys to the onscreen keyboard, a button in the panel and you can make it bigger or smaller (depending on your screen size and scaling factor, the normal OSK might be very small)

Distro + DE for SGo 1
If you want wo stick to GNOME (it still has the best touch experience of all desktop DEs in my experience) you could try the improved-osk-extension. It can make the OSK much bigger and has some other neat features. Another touch friendly DE is Phosh which is actually developed for Linux phones and completely optimized for Touch although it doesn't support everything you would expect from a desktop DE since it's mainly optimized for phones (and tablets). You could also try KDE Plasma Mobile but in my experience it wasn't reliable and has many bugs and crashed a lot.

What extensions would you most like to see for Gnome?
The newest 'Improved OSK' is made by NickShymrev and he's actively working on a Rewrite for GNOME 43 which will use the terminal mode of the keyboard to be more stable and will include the option to force the osk making the 'Force OSK' extension not needed. Any better on-screen keyboard?
Try the gnome 43 rewrite. It works, but there's no way to remove the text suggestions
