You could also consider installing Kernel 6 on Mint. I used ukuu (https://github.com/teejee2008/ukuu) for that in the past, works quite well, even though the notifications when new versions are available are a bit annoying - you'll see what I mean when you get there :)

Ubuntu rollback updates
Hold the shift key at boot for the GRUB boot menu, select the older kernel and boot normally. In Ubuntu I'd recommend you install ukuu (https://github.com/teejee2008/ukuu) to remove the new version that's causing trouble.

Ukuu is now paid, as said in its github page. There is a fork of the old version of ukuu, which is actively maintained, called Mainline.

You can also try booting in nomodeset mode, which disables a lot of drivers and tries to run everything in software mode (extremely slow, but you might be able to get through the installer). If you can install it this way, it will probably still not boot after being installed, you need to boot the OS (already installed) in nomodeset again. Then you need to manually install a newer kernel on the OS. You can use Ukuu (here) to update the kernel on the currently running linux distro, for ubuntu based distros.

5.11 Kernel seems to have made a huge difference for me
I have used the 5.11 (installed via the program Ukuu) and it worked well on my machines, except for one machine that needed throttleFix (and using the latter on 5.11 caused log spam). At present I use 5.8 on my machines (but both machines are laptops with Intel graphics).

On Mint 21? I don't think so. The only possible way would be to install Mint 20.3 which comes with the older Cinnamon before the Mutter rebase. You could then install a newer kernel like 6.3 using Mainline, but you would be stuck with an Ubuntu 20.04 base which means much older apps in the repositories.

Out of the box Ubuntu and derivatives (and also Debian upstream of Ubuntu) are probably shipping with older kernels. Normally I'd just suggest installing the GUI kernel version management tool mainline (IIRC mainline should just be available in the Ubuntu software center) and just installing a more recent kernel to get support. Though you indicated you didn't want to touch the command line, it is also very possible to load drivers that are not shipped with the kernel if someone were willing to do so.
