Activity is a relative number indicating how actively a project is being developed. Recent commits have higher weight than older ones.

Use more complex 3rd party frontend library/framework (popular ones are React, Vue, Angular, Svelte) with ASP.NET Core WebAPI backend. Choice depends on your use-case and/or personal preference, they all have their strengths and weaknesses. Usually there is a choice of component libraries that can help you composing your UI (e.g. Chakra, MUI, Angular Material, etc.). Keep in mind that most of these libraries/frameworks imply client-side rendering.

If you don't like an amazing animation library like Framer Motion, maybe you will like React Spring. If you do not like a cool component library like Mui, then maybe you will like Chakra-UI. If you think an awesome data fetching library like React-Query is too complex for your project, then maybe you will love SWR.

I ran into the same issues with MUI in the past, it was really hard to get rid of the MUI 'look'. I think with the latest version it is a lot easier already, but still doesn't compare to Chakra UI (https://chakra-ui.com).
