Stars - the number of stars that a project has on GitHub. Growth - month over month growth in stars.
Activity is a relative number indicating how actively a project is being developed. Recent commits have higher weight than older ones.
For example, an activity of 9.0 indicates that a project is amongst the top 10% of the most actively developed projects that we are tracking.

Kotlin/ Thingspeak Interfacing.
First of all, you need to ask yourself how familiar you are with MatLab. Then from a dev point of view, could you use an API to reference cloud data then apply analytics. Great intro to IoT. I can see that company going far in 5-10 and may invest based on trajectory. https://thingspeak.com

Help me check my circuit for my self-sustaining water meter
I'm not sure yet. Maybe something custom, but probably not. I was thinking about Thingspeak before.
- Do you know best websites for hosting Arduino Internet of Things (IoT), other than Cayenne from myDevices?

Displaying readings to website?
I haven't got around to MQTT yet, but as an easy interim solution I recommend ThingSpeak https://thingspeak.com/ as you can set up an account for free and getting an ESP to send data to it is trivial. Plus you can access it via the web, or embed their graphs and dials into a webpage. The graphics are a bit meh though.

(esp32+adxl325+sdcard)Storing sensor data in sd card(in txt file) and then sending it to cloud.
I'd suggest sending data directly to AWS IoT Core (Free tier eligible) with the MQTT protocol. You can send data in JSON format. You could then use a serverless function to send that data to a DynamoDB (noSQL) database as the API is easy to use.

What are some alternatives?
Thingsboard - Open-source IoT Platform - Device management, data collection, processing and visualization.
esphome - ESPHome is a system to control your ESP8266/ESP32 by simple yet powerful configuration files and control them remotely through Home Automation systems.
Grafana - The open and composable observability and data visualization platform. Visualize metrics, logs, and traces from multiple sources like Prometheus, Loki, Elasticsearch, InfluxDB, Postgres and many more.
ArduinoJson - 📟 JSON library for Arduino and embedded C++. Simple and efficient.
Freeboard - A damn-sexy, open source real-time dashboard builder for IOT and other web mashups. A free open-source alternative to Geckoboard.
wordclock - Arduino wordclock
Phant
