Bcachefs – A New COW Filesystem
Not exactly ZFS in Rust, but more like a replacement for ZFS in Rust: https://github.com/redox-os/tfs
Worked stalled, though. Not compatible, but I was working on overlayfs for freebsd in rust, and it was not pleasant at all. Can't imagine making an entire "real" file system in Rust.

Port OpenZFS to Rust
I'd say there's some hope (albeit distant and with great effort) for building cross-platform drivers on a shared codebase. It might be fun to build some glue for Redox TFS and the ixy.rs driver.

Port OpenZFS to Rust
From a quick bit of digging, it sounds like alcaithemad/rust-kext and pmj/rusykext managed to build some rudimentary macOS kexts in Rust. Some other folks have also built Windows Kernel Drivers and FreeBSD Kernel Modules.
What are some alternatives?
When comparing tfs and rust-kext you can also consider the following projects:
ixy.rs - Rust rewrite of the ixy network driver
zfs - OpenZFS on Linux and FreeBSD
rustykext - An OS X kext written partly in the Rust programming language.
httm - Interactive, file-level Time Machine-like tool for ZFS/btrfs/nilfs2 (and even actual Time Machine backups!)
arx - Store files and directory in an archive. Like tar, but faster and with direct random access.
