Long term data ingestion plan: roll your own singer + cron, airbyte, meltano, something else?
Meltano can run any Singer tap or target, even if it's not discoverable out of the box. https://github.com/transferwise/pipelinewise-target-s3-csv is a pretty popular target for moving data to S3 as CSVs. Coupled with https://github.com/singer-io/tap-hubspot, https://meltano.com/plugins/extractors/quickbooks.html, and https://github.com/dcereijodo/tap-gsheets you should be able to get up and running. I'm not familiar with SnipeIT so I'm not sure if there's a tap for it, but we've been working on an SDK for Singer taps to make it really easy to build your own.

Why You Should NOT Build Your Data Pipeline on Top of Singer
Some integrations help out by specifying what the configuration should look like in a readme or in a sample config. Even these lead to headaches. They often just list the fields that need to be passed in but do not explain what they mean, what their format is, or how to find them (good luck trying to find all the information you need to configure your Google Ads integration!). In other cases, they only list a subset, and then you have to discover the rest by reading the integration (e.g., tap-salesforce doesn’t mention is_sandbox in the docs UPDATE: someone has now added this field in the readme with this PR).

Meltano[0] might be of interest to you. Easy way to move data that should be very familiar for software engineers. If a connector doesn't exist our SDK makes it easy to build it.

Meltano can now run any Airbyte source connector thanks to a community contribution
We currently don't do any process optimization on a per-stream basis when doing an extract. We have seen folks in the community running each tap separately for each stream which can speed it up. We've got an issue around this (Melturbo).

PostgreSQL to DuckDB - There and Quack Again
I built my data pipeline to Extract some data from websites and CSV files, Load it into my database, and Transform it into a reporting-ready schema. I used Python and Pandas to extract and load some of the data and Meltano to load some additional supporting data. All of that data went into a PostgreSQL database hosted in the cloud on Azure where I then used dbt to create data models in the database optimized for reporting. Finally, I use Metabase to visualize the data. (whew! that's a lot of moving parts!)

What should be the main point of a personal project?
I'm learning https://meltano.com/ right now, so am building custom Taps, mostly for fun. I'm enjoying it. I'm pulling in a variety of data from https://www.geonames.org/ and Canadian weather/climate data into BigQuery
