Gotify Notification for unattended-upgrades
I have not used it, but it does look like you can send to Gotify from the command line with the gotify-cli or httpie. You could probably modify the unattended-upgrades scripts to incorporate its usage and achieve it that way. You would then get an email and a Gotify alert.
