Infinitime with wrong time zone
Are you using the AUR package for siglo? The AUR package hasn't been updated since April, so try either editing the PKGBUILD yourself to pull the new version, or you can follow the instructions on the actual github repo for siglo.

Just got my PineTime
On Linux, you can use Amazfish and Siglo to connect to the PineTime, synchronize the time, notifications, firmware update,... I think both are available in Arch and Manjaro ARM using pacman.

Why can't PineTime time be set directly from watch?
You need a companion app to utilize the watch properly. I assume you use Infinitime on your PineTime, try using Gadgetbridge on Android or Siglo on your Pinephone(build the Flatpak from source on the phone). As to why there is no ui on the watch to set the time and date I can only guess, but they might try to save some memory since a smartwatch is only really useful in combination with a host device anyway.
