What is your opinion on Linux?
You don't need to use CrOS Flex, you can use Brunch, it's another to run ChromeOS but also allows you to use Android Apps on it (Which is the key feature of ChromeOS imo).

I was gifted a chromebook a little while ago. Turns out, it's got something called grub and ubuntu on it. How do I get chromeOS back?
You may look into Brunch as the Chrome OS Flex is more limited. https://github.com/sebanc/brunch

How do updates work on Brunch? Can I update to a new Chrome OS version like I can on a Chromebook, or do I have to do something special?
AFAIK there is no auto-updater in Brunch. Read about the project here: https://github.com/sebanc/brunch. Ask questons in r/Brunchbook.

Is it possible to create an ISO of your current DE through VirtualBox?
It does seem possible: https://www.linux-live.org/. I've been eyeing a custom live ISO, but haven't run through the process myself. That being said, I'd agree with u/doc_willis for the use case at hand.

Anyone know of any software which could copy my whole Linux configuration into an ISO?
Turning your installation into a bootable .iso isnt that difficult. That can easily be done with linux live kit.

Which distro for linux gaming? Thoughts?
Best/Simplest solution I ever have used was 'MX Live USB Maker' from and only for 'MX-Linux' (an other nice Debian/Ubuntu/-fork, but not primarily made for games). 'Linux Live Kit' (www.linux-live.org) should do the job too - have not tried yet and can't tell something about that.

can confirm.
there's an iso maker for it
