What is your opinion on Linux?
You don't need to use CrOS Flex, you can use Brunch, it's another to run ChromeOS but also allows you to use Android Apps on it (Which is the key feature of ChromeOS imo).

I was gifted a chromebook a little while ago. Turns out, it's got something called grub and ubuntu on it. How do I get chromeOS back?
You may look into Brunch as the Chrome OS Flex is more limited. https://github.com/sebanc/brunch

How do updates work on Brunch? Can I update to a new Chrome OS version like I can on a Chromebook, or do I have to do something special?
AFAIK there is no auto-updater in Brunch. Read about the project here: https://github.com/sebanc/brunch. Ask questons in r/Brunchbook.

Chromeos via Brunch is great on cheap netbooks, like my plastic 13.5" 3000x2000 celeron n4020 Kuu YobookM (too bad internal speakers don't work but a bluetooth speaker does the job - I believe sound support of the ES8336 will come soon in Linux)
discovered an issue with network (apparently dns is not working well as signal strength is good) and then discovered that I need to use brunch unstable ( https://github.com/sebanc/brunch-unstable/releases ) otherwise the screen is completely dark when booting (similar to the issue you describe in https://www.reddit.com/r/linuxhardware/comments/ncqr39/black_screen_on_my_laptop_remote_desktop_works/ )

WARNING: Updating a dual boot install of the brunch r93 stable release (or any previous brunch release) to ChromeOS r96 will break the install.
A brunch update will be needed before you can update a dual boot install to ChromeOS r96. I have just uploaded a brunch unstable release with a potential fix: https://github.com/sebanc/brunch-unstable/releases/tag/r94-unstable-20211031
