Foundry is great if there's a module and probably not worth the effort if there isn't. You can try putting together what you need from either https://gitlab.com/rolnl/sandbox-system-builder/-/tree/master or https://github.com/foundryvtt/worldbuilding both if which have some youtube tutorials.

Can I make custom classes/subclasses for players? Kind of the determining favtor for me honestly.
Most systems are already made for you by the fantastic community and some of the game devs ( https://foundryvtt.com/packages/systems ). If the game system you choose to run isn't in foundry then there are tons of modules to modify how dice work, and even a few that allow you to create your own game system ( https://gitlab.com/rolnl/sandbox-system-builder/-/tree/master ). There's also an insane list of systems that aren't listed in Foundry's system that has been created, and can be found via discord or a google search. The community support for this VTT is beyond outstanding, and the discord is full of people answering the most obscure use case questions imaginable. It's rare for me to hear of a system/use case that can't be done here.

NOOB: Needs Help with Defining Attributes in Sandbox
I'm probably going to be making a sandbox sheet for a game which foundry doesn't have yet so I've been looking into it a bit. If you're having trouble with sandbox, make sure your question isn't answered in the tutorial on the gitlab page. There are also youTube tutorials linked there, and a way to contact the creator of sandbox on discord to ask for help.

Question about Sanbox
Go through the readme on the official project page, which contains a step by step tutorial, and you'll have a simple system up in no time. Then get tricky with more advanced stuff. In two of the systems I built, I created character species where the character automatically inherited all the appropriate bonuses, skills,etc when they added that species to their character. https://gitlab.com/rolnl/sandbox-system-builder/-/tree/master
