how does prometheus monitor elasticSearch? e.g. if I want to alert on a host publishing a certain event
What you're looking for is more akin to the es exporter which will present the result of a query as a metric.

Is ELK overkill for this?
A couple of jobs back, we also used Elasticsearch queries to create Prometheus metrics(and from that alerts) from log lines that contained data that wasn't available via regular metrics.. There's even an exporter for that.

ESP8266 Adventures
To collect and view the sensor data I'm using Mosquitto, Prometheus, and Grafana. For Prometheus to be able to collect the data I'm running an exporter that reads the data from the queue and provides an HTTP endpoint in the format Prometheus expects.
