Activity is a relative number indicating how actively a project is being developed. Recent commits have higher weight than older ones.
For example, an activity of 9.0 indicates that a project is amongst the top 10% of the most actively developed projects that we are tracking.

My guess is that for both tracks the actual language code used is just Spanish, and it's just the title that indicates esp versus lat. In that case, since there are multiple tracks with the same language, Plex will pick the first track available. You might have to use something like PASTA or Plex Auto Languages for better control over selected audio/subtitles.

It might be easier to use something like PASTA to bulk-select the specific track you want, or Plex-Auto-Languages, which will give you a more Netflix-like experience where changing the track of one episode will go through all episodes in the season/show and automatically select a track of the same language/name if available.

How to select subtitles for entire show with multiple English subtitles?
I use https://www.pastatool.com/ for setting the defaults. You can chose to set which track and subtitle is the default for a show or movie.

Outside of that, you'll have to use something like PASTA or Plex Auto Languages to bulk-update the selected audio/subtitle stream.

Organizing anime shows with English/no sub versions and Japanese/sub versions
Since you have the remux, I'd just keep that, and select the right subtitle/audio stream when playing the file back. The major benefit there is that you don't need to have two copies of the same video stream just for different audio/subtitle tracks. The major downside is that if the audio/subtitles you want aren't the default, you have to manually change it for every episode, so for the best experience I'd combine that with a third-party script like Plex-Auto-Languages (a script that will change the audio/subtitle stream for all episodes in a season/show when one changes) or PASTA (a one-time bulk operation tool).

Not within Plex itself, but you can bulk-update a subtitle track for a season/show with PASTA. Plex-Auto-Languages does something similar by changing tracks for an entire season/show if you change the track for a single episode.

Help Please!!!
The old WebTools isn't something you open in Plex itself, you have to go to http://[your-pms-server-ip-address]:33400. That said, what exactly are you trying to use it for? Chances are there are other ways to do it that don't involve using an unmaintained plugin.

As far as Plex goes, the app is apparently going to be removing plugins completely in the near future, so trying to develop a plugin for it definitely seems to be a lost cause now.

X-Plex-Token is not in the URL. . . Trying to properly install WebTools-NG
I'm not sure if WebTools-NG makes it easier to install plugins. The no-longer-maintained WebTools.bundle did via the Unsupported App Store, but even then it's not a requirement for installing plugins, as it can be done manually as well. Not to mention that pretty much the only plugins that still work with full functionality are metadata agents/scanners.

Yeah, the old plugin-based version is still around and offered similar functionality, but with plugins being deprecated, WebTools moved to a standalone service.

Sorry, but since plugin's are been depreciated ( Ref: https://www.plex.tv/blog/subtitles-and-sunsets-big-improvements-little-housekeeping/ ) the UAS is sadly dead, which I also announced on the webtools.bundle github repo a long time ago

35 Movies Missing From My Server, How can I fix this?
If that's not the case and they're just disappearing completely, then you might have to resort to tools outside of Plex to find what's not getting scanned in. There used to be a Find Media tool that was part of WebTools, but it apparently doesn't work anymore (probably because Plugins were deprecated almost 4 years ago now, so most are broken). If you're comfortable running a random Python script from someone on the internet, I created this script several weeks ago that can scan your local folders and compare it against what Plex shows in your library. It's not pretty and was written quickly, but should get the job done.

It's 2022, are plug-ins dead?
Here are some plugins on the forum: https://forums.plex.tv/c/third-party/plugins/19. Unsupported AppStore comes with WebTools and as far as I know can still be installed (https://github.com/ukdtom/WebTools.bundle/wiki/Install).
