You can inline LaTeX chapter/section break commands even when processing Markdown, and in several ways (dropping \newpage directly in the content before chapters, using header templates, as YAML metadata in the Markdown file, even on the command line).

Really? Should work with any OpenType font. Are you generating in a language that doesn't use roman-ish alphabet? You're not wrong that working with TeX can involve a lot of yak shaving in general. If you really want to go that route, take a look at pandoc and ping me if you have questions. Pandoc in combination with the Eisvogel LaTeX template can be a quick way to get a really good-looking doc.

How to preview Markdown as PDF using pandoc

I looked for pandoc templates, and found "eisvogel" (https://github.com/Wandmalfarbe/pandoc-latex-template) although I still did not like how it rendered as I wanted it to look like a dissertation.

For the versioning, I just have a git repo where I keep every role, schema, table, view, function, trigger, etc. definitions. Every time I change something in the database I first change it in the git repo too to have an history.
