Panning while sending individual tracks in overbridge
I'm using Overwitch on linux and when I send the tracks to my daw they are all received as mono, which makes sense since I presume the tracks are mono until they are bussed to the amp which receives all tracks.

How do I get Bitwig (linux) to see the midi from my Digitakt?
I've got overwitch running and I can see the audio and midi ports in qpwgraph (and they both work, I can control a standalone soft synth) but Bitwig doesn't see the midi and there are no midi inputs to patch them into on the graph.

Minimal DAW-less setup
The Elektrons are only class compliant in stereo mode. You can set them to overbridge mode and then you're able to record all the tracks but it's not class compliant anymore and you need a software. For Windows and Mac there's overbridge but for Linux you can use overwitch: https://github.com/dagargo/overwitch
