In case you are determined to do UPI for the sake of learning (right on!), here is the OCP Installer docs on it. Also, this is a great guide for UPI on vSphere w/ Ansible, albeit for 4.11, but not much changed for this environment.

We are open to practice using any open-source project, however, we want to set a sharp focus on projects maintained by the Red Hat, and our own projects in the Caravana Cloud organization on github. If there is no reason to do differently, we'll build using technologies such as OpenShift, Quarkus, Ansible and related projects.

Openshift Ingress controller with keepalived VIP
If you aren't doing IPI or using the Assisted Installer, and this is non-production, then I believe it's possible to replicate the same behavior by specifying the IPs in the right place in the install-config.yaml, which will trigger Machine Config Operator to deploy the right components. I don't know how to do this offhand, but there might be some info in GitHub.
