Is something like this even possible? I've seen https://github.com/jamestthompson3/nvim-remote-containers, but I can't really tell if this is what I'm looking for or not

How do you achieve the devcontainer experience without any VS Code? I am aware of plugins like https://github.com/jamestthompson3/nvim-remote-containers and https://github.com/esensar/nvim-dev-container however I didn't figure them out and they don't seem very active.

Developing inside docker with COC and neovim.
This looks like a valid solution: https://github.com/jamestthompson3/nvim-remote-containers also you can try and set a language server inside the container, use the host network and have coc listening to that server.

Neovim in a terminal can only display monospaced characters. However there are GUIs for Neovim and Goneovim used to have a markdown preview.

I think the main thing now is probably waiting for one of the nvim GUIs to develop the appropriate features. Goneovim looks like it's getting there and may already be good enough for your needs. E.g. you can break any nvim window (floats, splits etc) into a separate external desktop window.

you can start a headless neovim inside the container with nvim --listen 127.0.0.1:7777 --headless and then use something like goneovim (https://github.com/akiyosi/goneovim) to connect to this instance. all your tools (npm, linters etc) will be inside the container
