Outlook is Microsoft's new data collection service
I confirm the issue of delays/freezing of Claws-mail. I really liked the simple UI, but freezing too often, couldn't stand it. I had searched about it, I got some answers that's it's single threaded if I recall well.
Since you mentioned mutt and it's steep learning curve, I recommend you another TUI MTA/mail app. It's nmail (https://github.com/d99kris/nmail). Simple, Pine/Alpine like interface, has great features (for example, saving mails in sqlite - can be used offline). Also the developer is active and friendly, in case you find bugs or have any proposals for enhancements.

What are some of your favorite CLI/TUI apps?
nmail MUA/e-mail client. Easy and fast to compile, stores e-mails in sqlite, offline accessible and searchable. Much better alternative to Alpine or Mutt/Neomutt with imap download daemons and maildir mess.

VLC can be used to play a file from the command line, but there is no user interface. Players like cmus and musikcube have a text based interface and library management.

Whipper: Accurate Audio CD Ripping
cmus [1] is the closest I found to foobar2000. It is my main music player now, after years of disappointment. It supports FLAC and they claim they support CUE sheets, although I haven't tested your particular scenario. The way I use it is I have all my library in it at once, iTunes style. It has good search & playlists, but no drag&drop, since it's just command line...

Music Organisation on Linux
I have a (comparatively) small collection (20gb), so here is how I do it: I use beets for the organization (https://beets.readthedocs.io/en/stable/guides/main.html) and cmus (https://github.com/cmus/cmus/blob/master/Doc/cmus-tutorial.txt) for playing.
