James Webb Space Telescope: launch telemetry
There's alsoSpaceXtract, but it's specialized for SpaceX only: it works by detecting the location of various digits rather than using OCR, so it can't be used for other launches. See the images the script looks for.

I manually extracted telemetry data from Inspiration 4 stream and reconstructed trajectory and orbit over time. Animated using matplotlib.
I've already done that. It's called SpaceXtract. Unfortunately it doesn't support the 720p and the GUI SpaceX uses for crew launches.
