Quick JOSM tip: add the name suggestion list as a set of your tag presets
The Name suggestion list is a collection of commonly used feature tags, to ensure consistency when mapping. If you've used iD or EveryDoor, you've encountered it.

oil change place
If your editor supports name-suggestion-index (iD does), it should auto-tag for you when picking a well known company. So you could just enter something like JiffyLube and see that it uses shop=car_repair and use that tag for the shop youβre adding/modifying.

Franchises
Why must there be another way? If you mean it's hard to contribute to, it does take a little bit of technical knowledge, but if you don't know how to do it, just post what you want to do on the "issues" or "discussion" section of the NSI github page and someone will help out.
