Moving to Kubernetes
+1 for MySQL Operator, however I've never used the "official" one, I deployed several instances with Presslab's https://github.com/bitpoke/mysql-operator I'd say one MySQLCluster for customer (to allow independent version update for the engines).

Own kubernetes cluster
What issue do you see with the load balancer? For self hosted clusters, one can use MetalLB for example to have such single outfacing IP which will failover to another node keeping the same IP if a node dies.
