I would try to build a sample project and make it work. Something nice like a keyboard, robot rover or a weather station for a home automation system. It depends on your interests. Look at the code for several embedded projects on how they structure their build systems, tests, tools, libraries, dependencies and other stuff. The project I currently help for a hacker conference badge has quite the ecosystem at this moment. And for what it's worth it's never too late to learn KiCad! Free and open souce, plus svg2shenzen makes it really easy to build PCB graphics.

If you're working from a vector image, use Inkscape and the svg2shenzen plugin. Straight forward and works well.

My first blank panel design- I used svg2shenzen to generate the kiCAD project files and referenced the Printable Instruments repo for layer arrangement, format etc.

For graphics i would suggest the use of https://github.com/badgeek/svg2shenzhen (A inkscape plugin that outputs kicad compatible files)

It is certainly possible in kicad if you create your own footprints. There are various tutorials online for creating negative copper artwork in kicad. You might find SVG2shenzhen useful as well
