Current state of Flight Sim Hardware on Linux?
I have been doing a bit of research and found a github page with an open source driver for the Logitech x52 hotas https://github.com/nirenjan/libx52 I also found that CH Products offer gear that requires no drivers, just straight plug 'n play, and their stuff is priced decently, though it does look very plastic / cheap.

What kind of open source projects have you created?
I built a project to support the Saitek X52 joystick on Linux. It was primarily started to teach myself Linux programming, but it's grown much beyond it's original intent. My end goal is to support everything that the Windows driver does, and then some.

OBS is natively available for Linux iirc so that won't be much of an issue. I can't really speak on your external hardware like the Saitek or Elgato stuff but if they are for whatever reason not part of the 'linux-firmware' then this might be of interest for you. As you might have noticed on Linux github/gitlab will quickly become your friend so it might be wise to learn a few git commands.

I created a Python module to configure Logitech X52 HOTAS controllers
Since I play mostly in Linux, I needed something to set up the device, I found a C library (https://github.com/nirenjan/x52pro-linux) and a GUI app (https://github.com/leinardi/gx52) that could do the job, but the only python module was Windows only (it used a Windows DirectOutput DLL).

Making the switch - what are the gaps?
For "normal" games you could look yourself using ProtonDB regarding every game released on Steam and AreWeAntiCheatYet for most multiplayer games. If a game isn't available on Steam you have three possibilities. First if it's available on GOG, Epic Games or Amazon Gaming, you could use the Heroic Games Launcher. Second you could try to run the launchers through Steam itself using once again Proton. Third you could try installing it with a script or tutorial in Lutris or Bottles.

Can I suggest you head over to the lutris.net site and follow the link the lutris discord - with what you are describing, it would take me 20 minutes to get the base battle.net working so you can see what is causing your issue or 3 days back and forwards here. As a hint, your wine version has known issues, and unless you manually installed the lutris 0.5.14 from the git page in Mint, or are running flatpak, you have other issues related to that

As a data point, you can run a fair number of Windows games under Proton by using Lutris instead of Steam:

It's an OSS game launcher that takes the place of Steam, and you can set things up to run locally so you don't even need an account on their system (lutris.net).

Are there any major sacrifices you make to play on Linux over Windows?
ProtonDB is a community list of Steam games rating their playability. Heroic launcher runs GOG and Epic games. Lutris and Bottles can be used to run everything else.
