Besides open source software, is there such a thing as open source products?
System76 got the CAD files for the Launch keyboard up on their github repo. So at least for that one, it's the whole nine yards. If you've got the skills technically you could mill it yourself.

I hate plastic
The MountainG Everest Max has a aluminum top plate. The case is still ABS. Get the plans of system76s keyboard, find someone with a CNC and let them build it.
