Why are the USB-A ports on the launch keyboard upside down?
This render would be the bottom of the PCB, so the USB ports "hang down": https://github.com/system76/launch/blob/87345d0241604135dda3c70c5bb57b62d413b246/pcb/launch-pcb.png

Besides open source software, is there such a thing as open source products?
System76 got the CAD files for the Launch keyboard up on their github repo. So at least for that one, it's the whole nine yards. If you've got the skills technically you could mill it yourself.

I hate plastic
The MountainG Everest Max has a aluminum top plate. The case is still ABS. Get the plans of system76s keyboard, find someone with a CNC and let them build it.

What is "Launch Lite" keyboard?

System76 Launch Configurable Keyboard with Open Source Code
Unfortunately, system76 developers added exactly that functionality to their firmware: https://github.com/system76/qmk_firmware/commit/a1ab70c3a28a...
So it is possible to reboot into the firmware update mode just by sending some bytes to the raw HID interface. Apparently they did not think about the security aspect of this feature.
